Ras Malai /Cheesecake without a crust

As festival seasons started ,let us prepare some sweet dish.Sweet dish which we are referring here is Know as “Ras Malai” which is one of the favorite sweet dish in India. Malai means “cream” and Ras means “Juice” in Hindi.
Patties cooked in sugar syrup and dipped into condensed milk(liquid Rabri).Let start making this yummy dish.
We will be preparing this dish in six simple steps
  1. Extract  Chhena /Farmers Cheese from milk.
  2. Form Chhena Patties.
  3. Make Syrup and Cook Chhena.
  4. Make Rabri.
  5. Mix Rabri and Chhena.
  6. Garnish and Ready to serve.


Ingredients:
  1. Milk 2 Lt.
  2. Lemon 1.
  3. Sugar 3 Cup.
  4. Almonds (Badam) (chopped 7-8).
  5. Pistachio (chopped 4-5).
  6. Cardamom powder(elaichi) 1 tbsp.
  7. Saffron(Kesar) a few.
Preparation Method
Step 1 Extract Chhena From Milk
  1. Boil milk over high heat flame.
  2. Mix 1 glass of water after boiling .
  3. Mix the lemon juice,stir lightly till the milk curdles(separate into curd lumps).
  4. Extract Chhena using a piece of muslin cloth and squeeze to remove all the water.


Step 2 Form Chhena Patties
  1. Transfer the Chhena onto a plate and knead pressing with the heel of your hand,till the mixture become smooth.
  2. Divide dough into 8-10 portions and roll into balls and then press lightly to make patties (make patties so that it would not have cracks),


Step 3 Cook Chhena / Farmer cheese into sugar Syrup
  1. To make the syrup ,cook the 2 cup sugar with 3 cup of water and boil it for 5 minutes.
  2. After 5 minutes put the patties into syrup and cook it for 18-20 minutes .


Step 4 Prepare Rabri
  1. To make the Rabri ,boil milk in a deep and thick-bottomed pan on medium heat
  2. stirring till it reduces to three-fourth its original volume.
  3. scrape off the cream that will collect on the sides.
  4. Then add 1/4 cup of sugar  stir it.
  5. Add Almond .
  6. Add Pistachio.
  7. Add Saffron.
  8. Dip 5-6 leafs of saffron into milk mix it and add to the boiled milk and stir it.



Step 5 Mix Rabri and Chhena
  1. Add Chhena patties into Rabri.
  2. Cook it for a minute.
Step 6 Garnish and Serve.
  1. Add Saffron.
  2. Add Pistachio.

Now Ras Malai is ready to serve.





Some Tips
  1. Prepare patties with fresh Chhena.
  2. Make patties without any cracks.
  3. You can use vinegar to curdle the milk.
  4. Wash curdle with water , so that it will not have lemon flavor in chhena.
  5. Let Rabri be little liquid in nature for Ras of Ras Malai.

Upvaas Thalipeeth / Sabudana Thalipeeth

Let us make some  dish for the people who are fasting.Everybody can enjoy as snack.You can enjoy this dish any time in day.We will preparing Upvaas Thalipeeth / Sabudana Thalipeeth  in  three simple steps
  1. Prepare ingredients
  2. Cooking Upvaas Thalipeeth / Sabudana Thalipeeth
  3. Serve it.
Step 1 Prepare ingredients

Ingredients
  1. Soaked Sabudana (1/2 cup).
  2. Rajgira Atta/Kuttu Atta (1/2 cup).
  3. Boiled Potato 2.
  4. Peanut 1 tbsp (crushed).
  5. Ghee 2 tbsp.
  6. Grated Ginger 1 tsp.
  7. Green Chilies 2 chopped.
  8. Coriander leafs (chopped) 1 tbsp.
  9. Cumin seeds (Jeera) 1/2 tsp.
  10. Black pepper powder 1/4 tsp.
  11. Senda Namak 3/4 tsp/ as per taste.
Preparation Method
  1. Soak the Sabudana or sago in water for 1/2 hours .
  2. Drain water completely from the soaked Sabudana and let it rest for overnight ,in morning they will become very soft.
  3. First take a large bowl.
  4. And then peel and grate/mash boiled potatoes.
  5. Add pearl sago/Sabudana/Shaabakki.
  6. Add Rajgiri Atta.
  7. Add Green Chili.
  8. Add Ginger.
  9. Add Crushed Peanuts.
  10. Add Senda Namak.
  11. Add Black pepper powder.
  12. Add Cumin Seeds (Jeera).
  13. Add Coriander leafs.
  14. After mixing all the ingredients , form a dough of it,If required add little water.
  15. Now make  Sabudana Thalipeeth / Upvaas Thalipeeth from dough .
  16. Take a little ghee and lubricate your fingers ,take a little lump from the dough(lump as small as lemon).
  17. Now make it round and flatten it with your palms.
  18. Apply a little ghee on the polyethylene sheet as well,now keep the lump on sheet,add a little ghee on the top of it.
  19. Now cover the lump with the rest of the polyethylene sheet,press the lump gently with your palms . Slowly flatten/roll it with your palm and fingers.
  20. Don’t keep it too thin or thick.

  21. Step 2  Cooking Upvaas Thalipeeth/Sabudana Thalipeeth
    1. Take a Pan/Tava and Pre-heat.
    2. Lubricate the flat pan with some ghee.
    3. Now remove the Thalipeeth and keep it on the pan.
    4. Cook it with medium heat.
    5. After a minute , make a little hole in the center to add a little more ghee,also add  little ghee at sides.
    6. When it has been cooked (turn to golden brown in color) , flip it over and repeat.
    7. Repeat the process for the rest of the Thalipeeths.
    8. Looks brown on both the sides.
    Step 3 Serve it
    1 . Ready to serve with curd.




    Some Tips
    1. Thalipeeth size should be in 3-4 inch circumference .
    2. For proper cooking make holes in center of Thalipeeth and pour little ghee(while cooking).
    3. Cook Thalipeeth until it turn golden brown.
    4. Don’t keep Thalipeeth to thick or thin.
    5. Use Non-stick Pan so that ghee intake will reduce.
    6. Always cook with lid close.
    7. Always use Organic product , it will make your food more tasty.

Pithod Masala / Besan Curry

Pithod is the one of our family favorite dish ,which had been shared in our family from generations.You will find various style of cooking for  Pithod ,but we are giving a steamed version of it, which is more healthier alternative .This is dry gravy ,we can have curry for this also.
We will be preparing Pithod in simple three step
  1. Preparing Pithod.
  2. Preparing Gravy.
  3. Garnish and Serve.
Step 1  Preparing Pithod
Ingredients

  1. Gram Flour (Besan) 1 cup.
  2. Asafoetida (Hing) a pinch.
  3. Turmeric powder (Haldi) 1/4 tbsp.
  4. Red chili powder 1/2 tbsp.
  5. Oil 2-3 tbsp.
  6. Salt to taste.
Preparation Pithod Method:
  1. Take a mixing bowl and add Gram Flour.
  2. Add Hing(Asafoetida).
  3. Add Red chili powder.
  4. Add Salt.
  5. Add Oil.
  6. Add little water in it.
  7. And mix it well.
  8. Put this mixture into steamer (you can use Idly or Dhokla Steamer) and steam it for 10 minutes.
  9. Let it cool for 5 minutes.
  10. Cut into the small Square pieces (Pithod).

Step 2 Preparing Gravy


Gravy Ingredients


  1. Onion (2 medium).
  2. Asafoetida (Hing) a pinch.
  3. Turmeric Powder (Haldi) 1/4 tbsp.
  4. Red chili Powder 1/2 tbsp.
  5. Coriander Powder 1 tbsp.
  6. Garam Masala 1/4tbsp.
  7. Ginger paste(10 gram).
  8. Salt to taste.
Preparation Method:
  1. Take a Pan add little oil.
  2. Add Turmeric Powder.
  3. Add Red Chili Powder
  4. Add coriander Powder and stir for a minute.
  5. Add Garlic Paste.
  6. Add Onion Paste.
  7. Add Garam Masala.
  8. After 2 minutes Add salt to taste.
  9. Simmer it for 10-15 minutes.
  10. After 15 minutes add steamed Pithod in it.
  11. Add little water and let it cook for 5 minutes.
Step 3  Garnish
  1. Garnish it with coriander leafs.
  2. Ready to serve.





Some Tips
  1. Whisk gram flour batter properly their should not be any lumps in it.
  2. You can also prepare curry version of Pithod.
  3. Cut Steam Gram flour in different shape ,this will look appetizing.
  4. Use organic products your food will taste more tasty.

Cabbage Kofte

Cabbage kofte is one of popular dishes in north India.
We will be providing you one more variant of it ,with a healthy twist we are making cabbage kofte healthy for people of all ages.This another dry curry. Already we had shared similar (Lauki kai Kofte ) dish but as curry form.
Cabbage Kofte compliments both chapati/Roti/Phulka and with rice.Remember food look more appetizing when you add more colors.
So let us start preparing one more delicious.

  3. Garnish and Serve it.
Step 1  Preparing Kofte


Kofte Ingredients
  1. Cabbage(1 medium).
  2. Onion (1).
  3. Green chili (2-3).
  4. Turmeric powder (haldi) 1/2 tbsp.
  5. Red chili powder 1/2 tbsp.
  6. Coriander powder (dhaniya) 1 tbsp.
  7. Gram Flour (2 spoon).
  8. Rice Flour (1 spoon).
  9. Corn flour 1 tbsp.
  10. Salt to taste.
Preparation Method
  1. Chop cabbage, take a mixing bowl and put chopped cabbage in bowl.
  2. Add chopped onion.
  3. Green chili.
  4. Gram flour.
  5. Turmeric powder.
  6. Red chili powder.
  7. Coriander powder.
  8. Rice flour and salt.
  9. Mix it .
  10. Make kofte (round/oval shaped ball) of mixture.
  11. Shallow fry them in appam maker.
  12. Turn Kofte on other side and wait till Kofte turn into golden brown.
Note: A healthy twist in this dish we can shallow fry Kofte in appam maker.

Step 2 Preparing Gravy

Gravy Ingredients
  1. Onion (2).
  2. Tomato (2).
  3. Mustard Seeds  1 tbsp.
  4. Turmeric powder 1/2 tbsp.
  5. Red chili powder 1 tbsp.
  6. Coriander powder 1 tbsp.
  7. Garam Masala 1/4 tbsp.
  8. Ginger (one pinch)
  9. Salt to taste.

Preparing Gravy
  1. Take a pan, put little oil in it.
  2. Add Mustard Seeds.
  3. Add Ginger.
  4. Addchopped onion and stir for 2 minutes.
  5. Add tomato and saute till tomato become soft.
  6. Addturmeric powder .
  7. Red chili powder.
  8. Coriander powder.
  9. Stir it for 2 minutes and add salt and Garam Masala.
  10. Leave it for 10 minutes on medium flame.
  11. After 15 minute put Kofte in gravy .
  12. Add little water and cook for 5 minutes.
Step 3  Garnish And Serve it
  1. Coriander leaves for garnishing and serve it.

Some tips
  1. A healthy twist in this dish we can shallow fry Kofte in appam maker.
  2. Always have fried curries at lunch time , avoid having them in night time.
  3. Always use organic things , that will take your food to another level.
  4. Add enough Gram flour , so that it will help you to bind cabbage and also help cabbage to take oval shape.

Sabudana/Sago/Shaabakki khichdi

As we are into month of fasting.Let us make Sabudana Khichdi.
People can have this dish while they are fasting.
Sabudana Khichdi one of those recipes that is made during religious fasting/vrat/upvas.
People during the fast do not eat onions, garlic, wheat products,lentils or pulses.
You can also enjoy as snacks.
You will majorly find this dish in Maharashtra but now you easily find this dish through out India but not as easily available in Maharashtra.
Sabudana Khichdi is general served sweet curd /yogurt but we will serve it with Sweet /Plain Curd.
We will be preparing  Khichdi in three simple steps
  1. Soaked Sabudana.
  2. Preparing Khichdi.
  3. Garnish and Serve it.

Ingredients
  1. Sabudana(sago/Shaabakki) (1 cup).
  2. Potato (1 small)(Chopped).
  3. Jeera (Cumin seeds)(1 tbsp).
  4. Green chili 1-2 chopped.
  5. Lemon juice 2 tbsp.
  6. Red chili powder 1/4 tbsp.
  7. Senda Namakto taste.
  8. Coriander leaves.
  9. Peanut ((crushed 20 Gram).

Preparation Method
Step 1 Soaked Sabudana
  1. Soak the Sabudana or sago in water for 1/2 hours .
  2. Drain water completely from the soaked Sabudana and let it rest for overnight ,in morning they will become very soft .
  3. Now we are ready to prepare Khichdi.
Step 2  Preparing Khichdi
  1. Take a wok(Kadhai) put Little oil in it.
  2. Add Jeera (Cumin seeds).
  3. Add Chopped Potato.
  4. Add crushed peanut ,cover it and allow it to cook for 5 minutes.
  5. On the other hand take a empty bowl ,add soaked Sabudana/Sago/Shaabakki to it.
  6. Add and mix Green chili,Red chili powder and Senda Namak to the soaked Sabudana/Sago/Shaabakki.
  7. After 5 minute mix Sabudana/Sago/Shaabakkiin Wok ((Kadhai)and mix it well.
  8. After 2 minutes put coriander leafs (Dhaniya leafs) in it.
  9. Cook it for 5 minutes.
  10. Add Lemon juice.
Step 3 Serve it
  1. Garnish it with some more coriander leafs (Dhaniya leafs).
  2. Now its ready to serve.
  3. Serve it Plain/Sweet curd.


Some Tips
  1. Add Cumin Seeds(Jeera) when oil is hot.
  2. Always Mix Green chili,Red chili powder and Senda Namak to the soaked Sabudana/Sago/Shaabakki in a dry bowl.
  3. Add Lemon to the Khichdi when you are serving.
  4. Prepare it with love .

Ingredients
  1. Potato (2 big)
  2. Paneer 1 cup
  3. Red chili powder 1/2 tbsp
  4. Senda Namak to taste
  5. Jeera(Cumin Seeds) 1/2 tbsp
Preparation Method
Step 1  Prepare ingredients
  1. Take a bowl Grate Potato(Aloo).
  2. Grate Paneer.
  3. and Add red chili powder.
  4. Add Senda Namak.
  5. Add Jeera(Cumin seeds) in it.
  6. Mix all ingredients well.
Step 2 Cooking Cheela/Dosa
  1. Take a pan spray some oil on it
  2. Lay the mixture and spread it (Try to make circle shape) , spray some oil and cover it for 4-5 minutes.
  3. After 5 minutes check it if it is cooked properly (till it become golden brown in color)
  4. Turn it over and cook it from other side.
  5. After 3 minutes it will be ready to serve.
Step 3  Serve it
  1. Serve it with Green chutney or Curd.



Some Tips
  1. Use freshly grated potato and Paneer.
  2. Cooking with lid closed,this  will reduce the oil used in cooking.
  3. Enjoy it in any time of day.
